INGREDIENTS:
1 package Neo Jjolmyun
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
5 mint leaves. whole
5 basil leaves, whole
1 teaspoon sesame oil
1 teaspoon soy sauce
1 garlic clove, minced
¼ lb shrimp, cooked and cooled
Spring roll wrappers

Dipping Sauce:
3 tablespoons soy sauce
2 tablespoons tahini
1 tablespoon peanut butter
1 tablespoon rice vinegar
½ tablespoon chili paste
1 teaspoon fish sauce
1 teaspoon ginger paste
Juice of 1 lime
½ teaspoon sugar

DIRECTIONS:
1. Prepare Neo Jjolmyun according to package directions. Let cool completely. Meanwhile, in a small bowl, whisk together dipping sauce ingredients and set aside.
2. In a medium bowl, mix together Neo Jjolmyun, bell peppers, mint, basil, sesame oil, soy sauce and garlic until well combined.
3. Slightly dampen a spring roll wrapper and place two spoonfuls of Neo Jjolmyun mixture in the center. Add two pieces of shrimp and roll wrapper to seal. Repeat with rest of wrappers and filling.
4. Serve spring rolls chilled with dipping sauce. Enjoy!
